Brook & Bull Cellars is Ashley Trout’s latest winery and is a return to her roots of varietal driven, nuanced, and intricately balanced wines. Sourcing from top vineyard sites, Ashley crafts wines that can be appreciated now or aged over the next decade. In 2018, Wine Enthusiast recognized Ashley as their Top 40 under 40 Winemakers.
Brook & Bull wines are hand-crafted from vine to bottle, made with small fruit lots sourced from carefully tended vineyards. From alcohol to acid, phenolics to tannin, balance is always the goal. Brook & Bull reds tend to age nicely through year eight, while whites and rosés trend closer to the three to four-year mark.
